If your gums bleed easily or become soft and spongy around the teeth, if you constantly have small ulcers or sores on your gums and oral mucosa, if your skin bleeds easily, if you notice swellings near the joints, or if you suffer from a general feeling of weakness and weariness, then you must add raw sauerkraut to your daily diet and make your salad dressing with lemon juice. The old Central European saying that ‘sauerkraut every day keeps the doctor away’ is undoubtedly true, for raw sauerkraut is a wonderful remedy and should have a place of honour in every home. If you have no opportunity to make it yourself, go and buy some at a health food or delicatessen. In addition to vitamin C, its content of natural lactic acid and other effective enzymes makes sauerkraut a remedial food.
Sauerkraut water or juice is an excellent remedy for many gastric and intestinal disorders and ailments, but beware of the highly salty, factory-made sauerkraut, which cannot be considered\good for health. Remember, too, that only when it is raw does sauerkraut have the above-mentioned anti-scorbutic elements, supplementary substances and healing properties.
